In this month's issue of Everyday Food there is a section devoted to cooking with parchment paper. I have only used parchment paper in the past for cooking on top of, so the idea of creating parchment packets to cook my food was new to me. I tried this recipe
and thought it turned out quite well. I then made a bed of orzo with fresh chopped cilantro and piled the salmon and green beans on top. I like how you can achieve such a healthful meal, just by utilizing a little parchment paper. I will definitely be stocking up on more of this great paper.
