Icefields Parkway: Alberta, Canada
Before driving between Jasper and Banff we had read how the Icefields Parkway is one of the most of scenic drives in North America. We have been on a lot of road trips all over the world, so we were a little hesitant to believe this to be true. However, once we embarked on our trip we were constantly craning our necks to look out the windows and repeatedly oohed and aahhed our way down the road. We have seen a lot of beautiful scenery in our lifetime and the Icefields Parkway is right up there.
As we were driving we got really hungry and decided to pull over at Vermillion Lake for a picnic lunch. Once again, our expectations were low, but WOW! Such a gorgeous lake and literally right off the side of the road. Ever since we visited Iceland and found ourselves time and time again with nowhere to eat we have brought food with us on vacation. One of the best things we have done when we visit more remote locations is pack a plastic bin full of food in our car. Oftentimes this consists of:
Easily reheated boxed soups
Not easily injured fruit and vegetables like apples, grapes, carrots etc.
Chocolate bars which can be easily divided and enjoyed
A loaf of bread which makes the soup more filling
Water, lots and lots of water
