Vegetarian Lentil Soup
Let me introduce you to my new favorite thing: lentils. I have never really done much with them because I never knew how easy they could be to cook with. Upon doing a quick search I came across this simple Vegetarian Lentil Soup. One of my favorite parts about this recipe is how you do not have to soak the lentils the night before.
This is the perfect lunch on a cool, crisp day or a hearty dinner when served with a salad and crusty bread.
Ingredients:
1 tsp. vegetable oil
1 onion, diced
4 carrots, chopped
1 cup dry lentils
4 cups vegetable broth
1/4 tsp. black pepper
1/4 tsp. dried thyme
2 bay leaves
1 tbsp. lemon juice
In a large pot, sautee the onions and carrot in the vegetable oil for 3-5 minutes until onions turn clear.
Add the vegetable broth, lentils, pepper, thyme, bay leaves and salt.
Reduce heat to a simmer. Cover and cook until lentils are soft, about 45 minutes. Remove bay leaves and stir in lemon juice before serving. Makes 4 servings of lentil soup.
