Born and raised in the Pacific Northwest I feel most alive surrounded by trees and breathing in the fresh mountain air.

When I am not working you will most likely find me spending time outdoors, volunteering with my church and exploring this beautiful planet with my family.

What to do with all that squash??

One of the great things about squash, is its relatively long shelf life. I've had several butternut squash anxiously sitting on my counter waiting to be used. After searching online I came across this recipe and replaced the acorn squash with butternut. One of the unique appeals to this particular recipe, is the addition of cinnamon into this Winter Vegetable soup. I love how this flavor profile is not normally associated with savory soups.
